img_9803 We admit it, we forgot we bought bananas. So what do you do when you have a bunch of really spotty, way beyond ripe bananas on your hands? You make this Oatmeal Banana bread and call it a day. The brown butter gives it a nutty, rich flavor, the oats deepen the texture, and the brown sugar gives it just the right amount of sweetness.   img_9771 img_9778 img_9774 img_9780 img_9784 img_9787 The How To:
  1. Preheat your oven to 350 degrees F. Butter an 8x4-inch loaf pan and line the bottom with a rectangle of parchment paper.
  2. Brown your butter! Heat butter over medium-low heat (we like to use a non-stick skillet for this), and whisk occasionally until butter turns a toasty color. It will foam up - don't worry, just keep going until your kitchen smells amazing and nutty.
  3. In a medium bowl, mash the bananas and mix in the brown butter.
  4. With a wooden spoon, mix in the sugar, vanilla, salt, spices, and egg.
  5. Sprinkle baking soda over batter and mix in.
  6. Mix in the flour and oats until just combined.
  7. Bake for 50-60 minutes, until a tester comes out clean.

  • Don't skip the brown butter! It's worth it. Just make sure to keep the burner on medium heat and watch it to make sure it doesn't burn. check out this handy guide from The Kitchn for more instructions.
  • Feel free to add in 1/2 cup of any nuts you might have on hand - we recommend walnuts.
